Engel fired whole snapper with peperonata (serves 4)
Summer is here and what better way to end the day than with this delicious snapper recipe, made especially for the Engel Fire by renowned Kiwi Chef Michael Van de Elzen . This mouth-watering meal serves four, and is accompanied by a gorgeous peperonata, with salad and baby potatoes. Enjoy!
Ingredients
2kg whole snapper, scaled, gutted, fins trimmed
2 limes
100g baby fennel bulb tips
3 tbsp olive oil
1 tsp flaky sea salt
½ tsp freshly ground black pepper
1 pkt watercress
½ telegraph cucumber, deseeded and sliced into long strips
4 tbsp Grove avocado oil
Peperonata
2 whole red capsicums
20g butter
1 onion, finely sliced
4 cloves garlic, roasted and crushed
4 tbsp Grove avocado oil
1/2 cup roughly chopped Italian parsley
flaky sea salt
freshly ground black pepper
Method
Score the skin of the snapper. Cut limes in half and rub over skin of fish. Squeeze the juice into the slits you have made in the skin, stuff the limes and the fennel tips into the body cavity. Drizzle with olive oil and season with salt and pepper. Place on the grill lowering over the embers and closing the doors with the flue ½ open. Cook on one side only for 25-30 minutes (depending on fish size).
Combine the watercress, cucumber and avocado oil to make a salad.
To serve: carefully transfer snapper to serving platter and spoon over peperonata. Serve with salad and baby potatoes that have been wrapped in tin foil and cooked in the Engel embers.
Peperonata
This can be done before the fish is cooked. Rub the capsicum with some avocado oil and sea salt before placing onto the grill, lowering over an open flame until the skin blackens and cracks. Place them into a bowl, cover with cling film and allow to cool. Remove the skins by rubbing the skin off with your fingers. De-seed and finely slice the capsicum flesh. Heat butter in a frying pan over a medium heat, add onions and sweat until translucent – not coloured. In a bowl, mix together the capsicum, onion, garlic, avocado oil and parsley. Season to taste.
